Little Helpers for Leftover Easter Eggs

It sure was fun coloring all those Easter eggs!   We all know that eggs are healthy for us, but specifically, HOW are they good for us?  According to Nourish by Web MD, the nutritional benefits of hard boiled eggs can go a long way.  Benefits include:

Easter 2022 is now in the books, but what about all those beautifully colored eggs your little artists created?  While it’s a shame to have to crack all those beautiful shells, but it will be well worth it with these kid friendly recipes.  The kids don’t have to know all this healthy stuff, they’ll just enjoy making the recipes with you and gobbling up some yummy food!

I have fond memories of taking my older daughter (now43) to Hudson’s (now Macy’s) for lunch when she was only 5 years old.  She always got the kid’s pizza and I always got the Maurice salad.  Since Covid hit, I haven’t been able to find a Macy’s that has a restaurant any more.  I’ve tried Maurice salads at other restaurants but it’s just not the same.  Can you believe the Maurice salad dressing contains hard boiled eggs?  Here it is:

J. L. Hudson’s Maurice Salad Dressing

2 teaspoons white vinegar

1 – 1/2 teaspoons lemon juice

2 teaspoons finely minced onions or 1 – 1/2 teaspoons onion juice

1 – 1/2 teaspoons sugar

1 – 1/2 teaspoons Dijon mustard

1/4 teaspoon dry mustard

1 cup mayonnaise

2 tablespoons chopped fresh parsley

1 hard boiled

salt

I love soup but I’m not so sure about cold soup.  But hey, not only do I have leftover hard boiled eggs, but I have leftover  ham too!  This looks so good!  I’m going to try Natasha’s Russian/Ukraine summer soup and maybe cheat a little and heat it up!

 Okroshka Soup

8 cups cold water
1/3 cup sour cream
3 1/2 Tbsp Vinegar divided
2 1/2 tsp Salt
3 Tbsp chopped dill (fresh or frozen)
1/2 cup green onion, finely chopped
1/2 ham diced
3-4 medium cooked potatoes, peeled and diced
3 hard-boiled eggs, diced
3-4 cucumbers, diced

  1.  Peel potatoes and dice them into 1/4″ cubes. Place diced potatoes in a medium pot and cover with water. Add 1 Tbsp. vinegar and bring to a boil then continue boiling for 10 minutes or until the potatoes are cooked, but not falling apart. Drain well and set aside to cool. For quicker cooling, you can rinse potatoes with cold water.
  2. While potatoes are cooking, boil 3 eggs and cool them in ice water.
  3. Next, dice 3 eggs, 3-4 cucumbers, 1/2 lb of ham. Also chop 3 Tbsp. of dill and 1/2 cup of green onions. Place everything in a large pot.
  4. In a separate large bowl, whisk together 8 cups of cold water, 1/3 cup of sour cream, 2 1/2 Tbsp. of vinegar, 2 1/2 tsp of salt until combined. Pour the mixture in the pot with the rest of ingredients. Stir to combine and serve.
