(Don’t scrunch your face – it’s delicious – with whatever leftovers you have).
Okay, this isn’t a recipe, it’s and example. Throw in whatever you have. Now before the name of this soup grosses you out, keep reading and find out that it’s not only delicious, but healthy too!
Ingredients:
*Swanson Beef broth – low in calories
* Ginger (in a plastic bottle from the produce department) – anti-inflammatory
* Minced garlic (in a jar from the produce department) – antibacterial and antiviral qualities
*Pepper -can help with bone health, wound healing and metabolism
* Turmeric – anti-inflammatory
(That reminds me, I need to get oregano, I put garlic, turmeric and oregano in just about every soup I made, not only because they’re tasty, but also healthy).
*These are ingredients I always try to have on hand. I don’t add salt, but you might want to – not too much.
Now, these are the leftovers that I bought too much of. I can either make soup with them or throw them away.
Rinaldi Polish sausage – zero carbs
Cherry tomatoes – can protect against UV radiation and certain cancers
Cal-Organic Red potatoes – contain iron, zinc, vitamin C and potassium
Celery – may help lower cholesterol and blood sugar
Purple cabbage – helps in anti-inflammatory and detoxifying processes
Pearl onions – helpful in fighting infection
Throw it all in a pot. Bring to a boil then simmer for as long as it takes for the vegetables to cook to desired consistency.
